Beet juice doesn’t seem like an obvious choice for a veggie cocktail recipe. I searched the internet for inspiration, and I did find a few ideas. But let’s just say that those cocktails didn’t cut it and went right down the drain. (Beet pina colada? Beet Manhattan? Well, no.)
I kept thinking about the herby taste of gin and the earthy taste of beets. Could it be a match made in heaven? I think so! Give this recipe a try.
Ingredients for Beet Gin and Tonic
- Beet juice
- Freshly squeezed lemon juice
- Gin
- Tonic water
Should you make your own beet juice?
I tried, and it was just a complete mess. I was able to buy beet juice at our local grocery store. But if you want to give it a try, here’s a recipe to try.

Ingredients
1 ounce beet juice
1/2 ounce freshly squeezed lemon juice
1 1/2 ounces gin
3 ounces tonic water
Directions
- In a cocktail shaker or lidded jar, shake beet juice, lemon juice and gin. Pour over ice and top the glass with tonic water.
