What makes these vegetarian sliders special

Three things set these sliders apart from your humdrum party appetizer. First, red onions and red peppers are sautéed in a savory balsamic vinegar sauce. Second, they’re spread with brie, mozzarella and parmesan cheese. And third, they’re served on focaccia bread, instead of the ubiquitous sweet Hawaiian rolls. These flavors combine for the most spectacular vegetarian sliders.

Tips for baking your vegetarian sliders

Follow these tips for the perfectly baked sliders.

  • Line your cookie sheet with aluminum foil to help with cleanup.
  • Spray your foil with non-stick cooking spray to keep sliders from sticking.
  • Slice the focaccia so that slightly more of the bread is on the bottom than the top to keep them from getting soggy as they bake.

You won’t miss the meat in these spectacularly flavorful vegetarian sliders.

Ingredients

  • 1 tablespoon olive oil

  • ½ red onion, sliced

  • 1 red bell pepper, sliced

  • ½ jalapeno, minced

  • 1 clove of garlic, minced

  • 1 ½ cups cherry tomatoes

  • ¼ cup parsley

  • ¼ cup aged balsamic vinegar

  • 2 to 3 ounces Brie cheese

  • ½ cup mozzarella cheese

  • ¼ cup parmesan cheese

  • 1 loaf of focaccia bread

Directions

  • Preheat oven to 350 degrees. Line cookie sheet with aluminum foil and spray foil with non-stick spray.
  • To make balsamic veggies:
  • Saute red onion, bell pepper and jalapeno in olive oil until beginning to soften.
  • Add balsamic vinegar and saute 1 more minute.
  • Add cherry tomatoes, garlic and parsley and saute 2 more minutes.
  • To assemble and bake sliders
  • Split focaccia in half horizontally and cut into slider-size squares.
  • Place bottom layer of focaccia on foil-lined pan.
  • Dot Brie across bread in small pieces, trying to spread a small chunk on each individual square.
  • Spread veggie mixture evenly across bread.
  • Sprinkle mozzarella and parmesan cheese on top.
  • Add the top layer of the bread.
  • Cover with aluminum foil and bake 15 to 20 minutes, until cheese is fully melted.
  • Take off aluminum and bake another 3 to 5 minutes, until tops are golden brown.

Options for vegetarian sliders

  • Instead of Brie, try a mild cheese like Fontina or goat cheese.
  • Omit the jalapeño if you prefer a less spicy sandwich.
  • Instead of focaccia, try this recipe on brioche slider buns.
  • Add extra flavor by brushing on an herb butter to the top of the focaccia. For herb butter, melt 1/4 cup butter and whisk in 1 clove of garlic and 1/4 cup parsley.
