THE ULTIMATE BROWNIE: BROWN SUGAR BROWNIES

I know, I know. Everybody’s got a great brownie recipe. But, really. REALLY! These are the best brownies you’ll ever eat. The brown sugar keeps them super moist and fudgy while adding a slight caramel flavor. And the extra dose of vanilla puts them over the top. Plus, they’re super easy.

- Granulated white sugar
- Brown sugar
- Vanilla
- Flour
- Pecans
Why brown sugar?
What’s the benefit of brown sugar? Of course, this recipe calls for both granulated white sugar and brown sugar. But what’s the impact of that 1 cup of brown sugar? Brown sugar is white sugar with molasses added. The molasses is separated during the refinement process and then added back into brown sugar.
That molasses content adds moisture and a richer caramel flavor, creating an incredibly moist, fudgy brownie. Here’s an interesting take on the difference in brown and white sugar flavors and when you should use one or the other.

Ingredients
2 sticks (1 cup) butter
4 ounces bittersweet chocolate
4 large eggs
1 cup granulated sugar
1 cup brown sugar
1/2 tablespoon of pure vanilla extract
1 cup of flour
1 cup pecans, coarsely chopped
Directions
- Preheat oven to 350 degrees. Butter and lightly flour a 9-by-13-inch glass baking dish.
- Melt butter and chocolate in a glass bowl in the microwave on 30-second intervals until combined and smooth (about 1.5 minutes).
- Meanwhile, in a large bowl, beat the eggs with the granulated sugar and brown sugar until thickened. Add melted chocolate mixture and the vanilla and gently stir. Sift the flour over the batter and stir again. Add pecans. Be careful not to over mix.
- Pour batter into prepared pan and bake for about 35 minutes, or until a toothpick inserted in the center comes out clean with just some moist crumbs attached.
- Let brownies cool in the pan before cutting into squares.
